SAUMAGEN & PALATINATE PLATE

Due to the name, the hem stomach has a rather dubious reputation – wrongly. Anyone who has tasted a crispy fried, spicy slice will quickly find out: Saumagen is not a barbaric custom, but an extremely tasty variant of bratwurst, which moreover fits a bun better.

Together with “Lewwerknepp” (liver dumplings) and “Brootworschd” (bratwurst), the Saumagen forms the triumvirate of the Palatinate. The “Pfälzer Teller” must therefore not be missing in any traditional economy. “Lewwerknepp” and “Brootworschd” together form the “crooked sack”. Served with sauerkraut and mashed potatoes (“Grumbeerstampes”) or bread, these dishes shape the image of the Palatinate cuisine to the outside.
